60g/2 oz soft brown sugar
1 cinnamon stick
1 orange, halved and more slices to serve
1 dried bay leaf
1 Star Anise
60ml/2 fl oz brandy
Pour the wine in a saucepan with the orange, sugar, bay leaf and spices. Heat gently until the sugar has dissolved. Sweeten the wine to taste. Remove from the heat, stir in the brandy and strain into heatproof glasses. Garnish with the orange slices and spice to serve.
Delicious Christmas Eggnog
From holiday parties to time spent cuddled next to a warming fire, eggnog is the signal that the holidays are here. Traditionally it is only served during the winter and is comfort in a glass. 50g/2 oz caster sugar
1 vanilla pod, split
200ml/7 fl oz brandy
Place the milk, eggs, sugar and vanilla pod in a medium pan and heat gently, without boiling, until the mixture thickens. The eggnog may be chilled at this stage or served hot. Divide the brandy between four glasses and pour the eggnog over the top.
Christmas Cranberry and Lime Non-Alcoholic Cocktail
This non-alcoholic cocktail is perfect for guests who are not drinking alcoholic beverages during their visit. It is made with just a handful of cranberries, limes, sugar, lemonade and cranberry juice.

110g (4oz) sugar
100ml (3½fl oz) cranberry juice
100ml (3½fl oz) lemonade
Put the lime zest and juice of 1 lime into a small pan with the sugar. Bring to the boil and simmer gently for 2-3 minutes until the sugar dissolves. Set aside to cool completely. To serve, divide the syrup between 4 small glasses and top up with ice. Add the cranberry juice and lemonade, stirring to combine the ingredients. Dress with cranberries and slices of lime.
