Basic Pancake Recipe
2 medium eggs
75 g plain flour
200 ml milk
Oil for frying
A little salt
Whisk the flour, salt, half the milk and eggs in a large bowl until smooth. Add the remaining milk and whisk again until smooth. Pour the batter into a jug.
Heat a non-stick frying pan and drizzle a little oil in centre. Pour a little of the batter into the pan and immediately tilt the pan to spread the batter thinly and evenly. Cook for two minutes. Flip over using a turner or toss the pancake.
Cook the pancake for a further one to two minutes. Use the batter to make a further three pancakes.
Serve with toppings of your choice.
